Indian Vegetarian Recipes 
Gajjar Halva :
Ingredients used :
- 115 to 140 g. pure ghee
- 1 kg finely-shredded carrots
- 8 crushed green cardamoms
- 20 cashewnuts broken
- 2 tbs. raisins
- 1 litre milk
- 200 gm khoya (see note below)
- 200 gm sugar.
Preparetions:
Clean and soak the raisins for 20 minutes. Crumble the
khoya into tiny pieces. Wash scrape and grate the carrots.
Heat the ghee, fry the raisins and keep aside. Stir the carrots and cook
till they become dark orange. Add milk and cook covered till milk becomes
thick. Keep stirring at regular intervals.
Add raisins and cashewnuts and stir again. Add the khoya mixture and mix
till the entire mixture becomes thick. Sprinkle cardamom powder on top.
