Indian Vegetarian Recipes 
Palak Mangodi :
Ingredients used :
- 2 bunches spinach (palak)
- 1 cup moong dal mangodi, crushed
- 2 teaspoons cumin seeds (jeera)
- 1/2 cup onions, finely chopped
- 2 teaspoons ginger-green chilli paste
- 1 teaspoon garam masala
- a pinch turmeric powder (haldi)
- 1 teaspoon chilli powder
- 1 tablespoon oil
- salt to taste
Preparetions:
1. Blanch the spinach in hot water.
Wash under a tap of cold water and drain completely.
2. Purée the spinach to a smooth paste in a blender.
Keep aside.
3. Combine the mangodi with 2 cups of water and pressure
cook for 3 whistles. Drain and keep aside.
4. Heat the oil in a pan and add the cumin seeds. When
the seeds crackle, add the onions and sauté till they turn translucent.
5. Add the ginger-green chilli paste and sauté
for a few seconds.
6. Add the garam masala, turmeric powder, chilli powder
and spinach purée.
7. Lastly add the cooked mangodis and salt and simmer
for 4 to 5 minutes.
8. Serve hot.
Serves 4
Cooking Time : 20 mins.
Preparation Time : 15 mins.
