Greek Pasta Salad :

Ingredients used :

  • 8 oz. salad rotini, cooked and drained
  • 1/4 cup vinegar
  • 1 tablespoon dried parsley
  • 1 tablespoon dried oregano
  • 1 clove minced garlic
  • 1/2 tablespoon salt
  • 1/4 tablespoon pepper
  • 1/4 cup oil
  • 1 cucumber, diced
  • 1/2 cup ripe pitted olives, halved
  • 1/2 cup sliced green onions

Preparetions:

Mix vinegar, spices and oil. Add to pasta. Mix in vegetables. Chill. Serve with tomato wedges and dairy free feta cheese equivalent (optional).

Serves: 4
