Warm Artichoke Sandwich

Ingredients
- 1/2 can artichoke hearts (about 4 or 5 hearts!)
- bread of your choice (I like Trader Joe’s Cracked Wheat)
- Vegenaise (vegan, and delicious!)
- Trader Joe’s Dijon mustard (vegan!)
- 1 tablespoon Earth Balance “Buttery” Spread (vegan!)
- 1 teaspoon nutritional yeast
Instructions
- Drain some of the moisture from the artichoke hearts in a colander while melting the Earth Balance in a pan.
- After the Earth Balance is melted, sprinkle in the nutritional yeast and mix (this substance will look flaky – this is OK!)
- Sauté the artichoke hearts – turning once or twice. Make sure the Earth Balance/yeast mixture gets onto the hearts!
- Toast (or don’t!) the bread. Spread on Vegenaise and a bit of Dijon. Pat the artichoke hearts with paper towel to remove some of the moisture. When they are ready, stack on the bread and you are done!
- This recipe is also good with additions: spinach, roma tomato, or your favorite topping. Enjoy!
