Fresh Tomato Pasta Salad

Ingredients
- Enough pasta for one (say, 3/4 to 1 cup dry)..I like rotini
- 1 1/2 or 2 big fresh tomatoes
- 2 tablespoon minced onion (red onion is good)
- 2 cloves minced garlic
- 1/2 to 1 tablespoon extra virgin olive oil
- 1/2 to 1 tablespoon cider or balsamic vinegar
- a few bazil leaves (opt)
- plenty of black pepper
- salt
Instructions
- Cook pasta. While cooking, chop tomatoes. Throw everything else in with the tomatoes.
- Drain pasta; add to tomato mixture.
- The extra amounts of olive oil and vinegar are only if your tomatoes are SO BIG that they need more flavouring..make sure those tomatoes are nice and ripe.
- Nutrition Info: For the smaller amount of oil, I’d estimate it to be 320 cal or so.
