Ingredients
- 8 oz. salad rotini, cooked and drained
- 1/4 cup vinegar
- 1 tablespoon dried parsley
- 1 tablespoon dried oregano
- 1 clove minced garlic
- 1/2 tablespoon salt
- 1/4 tablespoon pepper
- 1/4 cup oil
- 1 cucumber, diced
- 1/2 cup ripe pitted olives, halved
- 1/2 cup sliced green onions
Instructions
- Mix vinegar, spices and oil. Add to pasta. Mix in vegetables. Chill. Serve with tomato wedges and dairy free feta cheese equivalent (optional).
