Ingredients
  • 3/4 cup vegan white sugar
  • 3/4 cup vegan brown sugar
  • 1 cup vegan butter or vegan margarine
  • 2 bananas
  • 2 cups flour (try a white-wheat blend)
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 1/2 – 2 cups vegan chocolate chips
  • 1 cup walnuts, crushed
  • 1/4 cup shredded coconut
Instructions
  1. ) Preheat the oven to 375 F.
  2. ) Cream together vegan sugars and vegan butter. Add bananas and blend until smooth.
  3. ) In a bowl, combine flour, salt, and baking soda. Mix by hand then add to batter. Stir in the vanilla, chocolate chips, walnuts, and coconut.
  4. ) Drop by teaspoons onto ungreased baking sheets and bake for 10-14 minutes (until brown around the edges).
  5. Cool for about 2 minutes before transferring the cookies to a rack or brown paper bag.
