Ingredients
- 3/4 cup vegan white sugar
- 3/4 cup vegan brown sugar
- 1 cup vegan butter or vegan margarine
- 2 bananas
- 2 cups flour (try a white-wheat blend)
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 1/2 – 2 cups vegan chocolate chips
- 1 cup walnuts, crushed
- 1/4 cup shredded coconut
Instructions
- ) Preheat the oven to 375 F.
- ) Cream together vegan sugars and vegan butter. Add bananas and blend until smooth.
- ) In a bowl, combine flour, salt, and baking soda. Mix by hand then add to batter. Stir in the vanilla, chocolate chips, walnuts, and coconut.
- ) Drop by teaspoons onto ungreased baking sheets and bake for 10-14 minutes (until brown around the edges).
- Cool for about 2 minutes before transferring the cookies to a rack or brown paper bag.
