Coconut and Veggie Soup

Ingredients
- 1 bag of frozen veggies
- 1 can of coconut milk
- 1 can of mixed beans
- 1/2 cup of shredded coconut
- salt and pepper to taste
Instructions
- This recipe is fairly simple, and requires a food processor.
- In a medium to large saucepan, add frozen veggies to boiling water. Let this boil for long enough that the veggies will soften.
- Once the veggies have softened and cooled, put this mixture (water and veggies) through the food processor until it becomes a puree. Pour into a bowl, and leave aside.
- Next, rinse the mixed beans, and along with a little water, put this through the food processor until it is a good texture. Add this to the veggie puree mix.
- Add the coconut milk to the veggie and bean mixture, along with the shredded coconut, and season with salt and pepper.
- This soup should be served hot, and can be stored in the freezer, until served.
