Vitamin C” Fruit Salad

Ingredients
- 1 navel orange
- 1 passion fruit
- 1 “gold” kiwi – sweeter and larger than normal kiwis
- 4 strawberries
- 4 pieces of crystallized ginger
Instructions
- Peel orange and cut into segments, and reserve some of the peel. Slice strawberries and kiwifruit (I leave the skin on the kiwi for extra fiber, but it may be removed if you wish) Combine in a bowl, then sprinkle with ginger (diced finely), passion fruit flesh and a small amount of orange zest.
- This is so simple and a real treat! It’s nice when left for a few hours, allowing for the flavors to mingle. Of course, you can add more fruit if you wish, (I also like adding mango or mandarin, but I like to keep it simple to let the individual flavors come through.)
